The Catbird Seat

The Culinary incubator and also known as The Catbird Seat here in Nashville is a meal of some great experiences in world flavour cooking. There are no tables other than the chefs table to bring this cooking directly toyou. This was a very well thought out meal for taste with expertly paired wines.

Sunflower seed risotto and black winter truffles

Wakame seaweed pasta with Scallop “bottarga” and Yuzu

Red miso pasta and peeky toe crab, sea urchin butter and toasted nori

Grilled cauliflower marinated in sake, cashew purée and poached turnip, black garlic

Bear creek farm beef in an umami crumb, burnt carrots and beef fat, bbq tofu purée

Hatcher buttermilk panacotta, lemon olive oil

Butterscotch crumble and burnt caramel ice cream, cookie crumble with luxardo cherries
