It’s all for national burger day so why not create the burger of your choice. Mine is all about Korea. I made a beef short rib hand diced Galbi burger, fermented Kimchi ketchup, fried egg and crispy pickled red onions. My lunch was so tasty..
My Recipe for Gabli, this fruity soy marinade is quite simple, i think it has to be paired with a spiced Kimchi or a chilli sauce to add layers of flavour, the texture will come from the fried onions and the indulgence from the cheese and the fried egg…enjoy!
Korean Gabli burger marinade
500g fine minced short rib of beef
4 tbls of soy sauce
2 tbls of Dark Brown sugar
1 tbls of rice wine vinegar
1 small finely grated pear
half a small onion minced or finely diced
1 tsp of minced garlic
1 tsp of minced ginger
Black pepper
50g white breadcrumbs to help bind the meat together.
Marinate the beef for a couple of hours then form into burger patties. Pan fry this to order and pair with the garnish of your choice.
